Sausage, Potato and Cheese Waffles
There is only one day out of the week that K and I make a “naughty” breakfast – Sunday. All through the week we eat fruit, yogurt, yogurt with granola or a small bowl of cereal. When Sunday comes around we always head into the kitchen for something a bit richer then the norm. Muffins, waffles, pancakes, omelets and the occasional breakfast quiche. So when I came across this recipe in Everyday with Rachael Ray I knew it would have to be made on Sunday. It seems to have all of the naughty things you eat in a breakfast – potatoes, sausage, egg and cheese – all rolled up in a waffle. Batter up! Sausage, Potato and Cheese Waffles In a medium skillet, cook the sausage over medium-high heat, cook potatoes, butter and sausage until butter is melted (approximately 5 minutes). Remov from heat and let cool about 10 minutes. In a large bowl, whisk together the flour, baking powder, cheese, salt and pepper. Stir in the milk and eggs until smooth. Stir in sausage-potato mixture. Using a waffle maker, cook the waffles according to the manufacture’s directions.
