*Grilled Pepper Flat-Bread
This is a bread I made on the grill. It was during one of the multiple hot days we had a few weeks ago. A whopping 90 degrees and its not even June! Out of necessity I opted to grill these breads into a thin flat bread similar to a pita, as its got a somewhat hollow interior. I utilized multiple flours and flavors to really offer up a great variety of texture and flavors. Corn meal and white wheat flour give this a nutty flavor, lots of fresh blacked pepper and prepared jalapenos, this bread is a knock out. I served these with burgers dressed with home made apricot and jalapeno chutney. This was a perfect summer supper that was surely a great mix up from the norm. Grilled Pepper Flat Bread: 2 tablespoons melted butter 1 cup milk 1/4 cup water 2 tablespoons (or two packets) yeast 3-4 tablespoons honey 1 tablespoon minced garlic 2 1/2 tablespoons prepared minced jalapeno (available in most grocery marts near the pickles) 2 teaspoons cracked black pepper 2 teaspoons sea salt 3/4 cups corn meal 3/4 cups white wheat flour (or whole wheat) 2 cups all purpose unbleached flour In a bowl combine melted butter, milk, water, yeast and honey. Stir to combine. Allow to rest until the mixture has started to foam and bubble. If you've recently used your yeast and your sure its active you can skip this step. Combine all remaining ingredients in the bowl. Allow to rest at room temperature for 4-6 hours preferably. To prep & grill the dough: Preheat your grill to a high temperature. Approximately 400 degrees. Divide your dough into approximately 2-3 ounce portions. Larger or smaller according to your own needs. If your making a flat bread pizza you might consider 4-6 ounces. Form the dough into flat rounds and lightly sprinkle with flour. Place onto the hot grill and grill until its browned to your own tastes. Approximately 3 minutes on both sides to insure done-ness. Longer for darker crusts. Split and serve hot. You can use this recipe for grilled pizzas, serve the flat bread with flavored oils or butters , I served mine with burgers and chutney. related searches : Grilled
