Potato soup with grilled bread

Ingredients

Number of serving: 3
2 (abt 300g) potatoes - boiled till tender, remove skin and mashed

5 garlic - chopped and fried until crispy with 3 tbsp of olive oil

1 tbsp Philadelphia cheese

toasted bread slices or ready-made crouton pieces

Chinese parsley for garnishing

salt and pepper to taste

Preparation

  • Add the mashed potatoes and 2 cups of water into a pan.
    Simmer until its heated and then add the cheese, salt and pepper to taste.
    Continue to simmer and remove once the soup becomes thick and bubbly.
    To serve, pour the soup into a serving bowl, put in the bread slices and Chinese parsley.
