Remove the sardines from the oil and take out the bones.
Mash them with a fork.
Add the cream cheese, mustard, and chopped chives. Mix well.

Observations
Mustard: you can replace it with whole grain mustard, or even omit it altogether.
Lemon: feel free to add a bit of lemon juice to your rillettes if you want some acidity.
