{Christmas Eve Spring Roll}
Decided to follow up Christmas Eve Dim Sum with Christmas Eve Spring Roll… since really… I ate both on Christmas Eve! As I’ve mentioned before… I really love vietnamese spring rolls… not only for the health value… but they are just so darn delicious! And believe me… they are super easy to make… it’s a fun process too if you’ve got lil’ ones around the house who enjoy getting their hands dirty. All you need are vietnamese rice wrappers, such as the photo below… and a few fresh ingredients. Hello… FRESH INGREDIENTS!!! The black bowl in the background holds the warm water to dip the wrapper in. It moistens it so you can easily fold it around the fillings. The meaty filling included shrimp & beef. See? Doesn’t this just scream FRESH?!?! Oh can opt to include rice noodles as well… or leave them out. The dipping sauce was a peanut base with a mix in of hot chili sauce. Mmmmm… nom nom… I On the side we had a plate of crackers & a crab topping.
