250 grams butter, at room temperature
220 grams castor sugar (original recipe - 250 grams)
250 grams self raising flour
85 ml freshly squeezed orange juice
a small bowl of orange rind
Ingredients for Icing.
125 grams icing sugar
5 tablespoon of freshly squeezed orange juice
Beat butter and sugar till fluffy.
Add eggs one at a time beating well each time.
Add orange juice, mix well.
Fold in the flour all at once.
Preheat oven at 170 Degrees C.
Pour batter in cupcake mould, bake for 10-12 minutes at 170 degrees C.
Put both ingredients ingredients in a bowl and mix well.
Spread icing on the cake and sprinkle some orange rind.
