Skyr flan, light and super easy to make!
Looking for a light dessert without the fuss? This skyr flan is just what you need! With just a few ingredients and a turn in the oven, you get a soft, melt-in-your-mouth texture reminiscent of childhood desserts, but in a lighter version. The tangy taste of lemon and the natural sweetness of honey bring the whole thing together. Follow the steps below :)

- Round pan, diameter 6 inches/15.5cm
Preparation
- Break eggs into a bowl. Add skyr, lemon juice, zest, cornstarch and honey.
- Mix with a whisk until smooth.
- Pour the batter into a greased baking tin.
- Bake in a preheated oven at 350°F/180°C for 30 to 40 minutes.
Chill overnight before serving!
- And voilà, it's ready! You can cover it with a red fruit coulis to give it a fruity taste, and decorate it with a few mint leaves!

Can I replace Skyr with another dairy product?
Yes, if you can't find Skyr, you can use plain yoghurt instead!
Why use cornstarch in this recipe?
Cornstarch ensures a smooth, creamy texture, preventing the flan from becoming too dense. It also acts as a binder for the preparation.
Can I replace honey with another sweetener?
Yes, you can replace honey with agave syrup, coconut sugar or white sugar, as you prefer. Honey adds a natural sweetness and a light floral note, but any other sweetener will do :)
