Skyr is an Icelandic speciality between yogurt and cream cheese, with low fats and full of proteins ! This cake is healthy and perfect for a pre workout !
Separate yolks and whites. Whisk yolks with sugar until foamy.
Add skyr, cornstarch and mix well. Add chocolate chips and combine.
Whisk the whites with an electric mixer until they form peaks and combine them gently to the batter.
Pour the batter in a bundt mould (or cake pan) and bake for 30 minutes at 350°F (180°C).
Leave the cake to cool down and unmould on a plate. Refrigerate for at least 1 hour. It's better to refrigerate it during 1 night. There you are, your skyr cake is ready !
