Digging Out with a Pizza Pan

Good morning!


Whew, dodged a bullet, last night we only got ~3 inches of snow. Today into tomorrow is supposed to bring another 8-14 – but for now, we’re good!  I’ll tell you what, one of the true joys of home ownership is having a garage. Ahhh - pure, scrapeless, clean car bliss… :) My days of this:

Are over! (Wouldn’t that be awful?!) One time when I lived in Minneapolis, this happened to my car in my apartment’s parking lot and I had to use a pizza pan to dig myself out. It was as tragic as it sounds! :(


I decided to channel some summer inspired eats today with a bowl of Banana Berry Overnight Oats for breakfast!

In the mix:



1 Fat-free Blueberry Yogurt
1/4 cup old fashioned oats
1 sliced banana
sprinkle of sliced almonds
Raspberries

It’s a fact that I can’t eat “chunky” stuff. Strawberry yogurt, chunky marinara sauce, cherry pie filling – nope, can’t do it. Gag! For some reason though, I can eat chunky blueberry and raspberry anything. Ie, I adore this blueberry yogurt with chunks of real blueberries. Yummy!

These perfect raspberries are pulling double duty today, as they’re the tart topper to my Sweet & Savory Kitchen Sink Salad.

Everything’s in there!



Mixed greens
Carrots
Roma tomato
Feta cheese
Chopped pecans
Raspberries

I just love the combination of the sweet raspberries with the salty feta cheese. Topped with some sundried tomato vineagrette and a splash of balsamic vinegar – well, you’ve got yourself a winner, friends. :D

I also chopped up one juuuuicy mango. I always feel like I’m vacation when I eat a mango. That’s not such a bad feeling right about now, is it?! ;)

Wow – today’s eats are a rainbow of color! I think I might do that subconsciously, actually. When it’s dreary and cold outside, sometimes I want to curl up with a big bowl of hot comfort food, but other times I need that visual pick me up. Fresh, vibrant fruits and vegetables tend to do the job nicely. :)
