Oatmeal Cherry White Chocolate Cookies from Joy the Baker makes about 24 medium sized cookies 1 stick unsalted butter, softened 1/2 cup firmly packed dark brown sugar 1/4 cup granulated sugar 1 eggs 1/2 teaspoon vanilla 3/4 cup all-purpose flour 1/2 teaspoon baking soda 1/2 teaspoon ground cinnamon 1/4 teaspoon salt 1 1/2 cups old fashioned oats 1/2 cup dried cherries, cut up 1/2 cup white chocolate chips or chunks Heat oven to 350°F/180°C. In large bowl, beat butter and sugars until creamy. Add eggs and vanilla; beat well. Sift flour, baking soda, cinnamon and salt together. Add the combined flour mixture and mix well. Add the oats, cherries and white chocolate; mix well. Drop dough by rounded tablespoonfuls onto parchment paper on cookie sheets. Bake 10 to 12 minutes or until light golden brown.
