Oatmeal raisin cookies (A clean eating recipe)
This cookie recipe is a wonderful ?clean eating? recipe to satisfy your sweet tooth. I used Sunsweet?s Lighter Bake for this recipe instead of unsweetened applesauce (hence the darker color), but the applesauce will work great, too. Sunsweet Lighter Bake is a mixture of fruit purees. It adds great moisture and taste. It?s a little tricky to find in stores, but you can easily find it online. The final result is a healthy, soft cookie that is big on flavor with just the right amount of sweetness. You can eat these cookies for breakfast and feel good about it! ?Clean Eating? Oatmeal Raisin Cookies ¾ cup white whole wheat flour (such as King Arthur brand) 1 tsp baking powder 1 tsp sea salt 2 tsp ground cinnamon1 cup Sucanat 6 tbsp canola oil ¼ cup unsweetened applesauce or sunsweet lighter bake1 whole egg and 1 egg white ½ tsp vanilla extract 2 cups old fashioned oats ½ cup organic golden raisins (or any dried fruit of choice) Instructions: Preheat oven to 375 degrees and line two large cookie sheets with parchment paper. In a medium bowl, combine flour, baking powder, salt and cinnamon. In the bowl of an electric mixer, combine Sucanat, oil, applesauce (or lighter bake), egg and egg white and vanilla extract. Mix on medium-high to blend well. Add flour mixture and mix on low until just combined. Add oats and raisins and gently mix until well blended. Form cookies into 2 tbsp size balls (I use a melon ball scoop for this, well packed). Flatten into a cookie shape (which I forgot to do-mine were more like cookie balls) and bake for about 10-12 minutes until lightly golden. Cool on a wire rack.
