This is a great rice pudding recipe. I got the recipe from Dave Lieberman and made a couple changes.

Ingredients:1 1/2 cup water
1/8 dash of salt
1 1/2 teaspoon butter
3/4 cup Arborio rice
1 1/2 cups 2% milk
1 1/2 cups half and half
1/3 cup sugar
1 teaspoon vanilla extract
1 teaspoon cinnamon

Preparation:step 1
Bring water, butter and salt, to a boil in a medium saucepan.

Add the rice, return to a boil, then reduce heat to the lowest setting. Stir occasionally and cook until rice has absorbed the water but it still al dente, 15 to 20 minutes.

In a separate saucepan bring milk, vanilla, sugar, and cinnamon to a simmer. Add the cooked rice and cook over medium-low heat until rice absorbs most of the milk and mixture starts to get thick and silky, 10 to 15 minutes.

Refrigerate until cool and set.
