Banana Oatmeal Chocolate Chip Cookies for Breakfast!
When I announced to my three year old that we were going to have cookies for breakfast he raced around the room punching his fists in the air screaming, "Woo Hoo!". When's the last time you had that reaction to breakfast? Especially to a healthy breakfast? I got this recipe from my sister-in-law and I will forever be in her debt. They taste great and they're good for you.
I will admit to you, as my sister-in-law did to me, that these taste WAY better right out of the oven than they do cooled and eaten cold. Fortunately they?re super easy and super fast to whip up, so it?s not really a big deal to throw together in the morning. Just my two kids and I ate about a half batch of these, just to give you an idea. You may want to adjust the size of the batch according to your family size. Banana Oatmeal Chocolate Chip Cookies 1/2 cup Whole wheat flour (I did 1/8 cup wheat bran + 3/8 all purpose flour...don't have whole wheat flour) 1 cup Rolled Oats 1/2 t baking powder 1/2 t baking soda 1/2 t cinnamon 1 T ground flaxseed meal (I didn't have any, so used Teff - super high in calcium) 1/4 cup maple syrup, agave nectar or honey 1/4 cup milk 1/2 t vanilla 1 Tbsp canola oil 1 ripe banana mashed 1/2 cup dark choc. chips (I did 3/8 c semi-sweet, but cranberries would be good) 1/4 cup chopped walnuts Throw it all in a bowl and stir! After that, just bake at 350 for 10 minutes. It makes 24 little cookies, or 4 "big, big, BIG" pancake cookies. And they're fabulous served with fruit :) The bigger ones still just took 10 minutes....I just flattened them to even them out before I put them in. Eat them warm. And guilt free! :) I did a few calculations, and we're talking for a little cookie around only 60 calories, with less than 2 grams of fat. Enjoy! related searches : Banana
