Best left overs EVER
I'm sitting comfortably in bed, officially stuffed to the brim. Sort of like my dinner was before I ate it :). I rushed home after stopping by an open house (aka schmoozing with the business people of Lake City). I grabbed some apricots then headed out the door for a 3 mile fitness walk. I ran for a little bit, but then just decided to walk due to lots of people and cars being out. I had seen a recipe for stuffed bell peppers a few weeks back and knew I had to make it some time. Upon realizing that I had one last serving of spiced skillet vegetables left, bulgur from last night, and one huge bell pepper that needed to be used, I decided tonight was the night. Best decision I've made all week! First I sliced the top of the bell pepper off and removed the stem and seeds from inside, then I boiled both the bottom and the top (I had already pulled the bottom out) for 5 minutes. While that boiled, I microwaved my leftovers for about a minute. Once the pepper was ready, I put a little water in the bottom of a loaf pan, then placed the pepper in. I filled it with my leftovers. I topped the leftovers with some reduced fat Sargento Mexican blend cheese and put the top on the pepper, then baked it in the oven at 350 for 15 minutes. Finished product! I got a little camera crazy because I was so impressed with how effortless this meal was, yet how pretty it turned out. Waiting to be eaten! Look. at. the. cheese. Yes, it tasted as good as it looks. I ate the whole entire thing... Now, I'm entirely too full, but happy! It was the best meal I've had all week and it was leftovers. Who knew that could happen?! related searches : Best
