Chai Peach Yogourt Muffin
I think I am starting to be addicted to chai tea. I have only discovered it one month ago when I randomly ordered it in a coffee store. I fell in love immediately with it and now I considered it as my favorite tea. Last week, when I went to a farmer market close to where I work, I saw some gorgeous peaches I could not resist to buy. And the idea to combine peaches with chai came to my mind. I put this idea into work and I got tender and delicious muffins. However, because that was the first time I baked with chai and I was scared to get a too strong chai flavor, I decided to only add 4 mL of it. I realized that was not enough for my taste and, next time I bake with chai, I will add a bit more. Ingredients
500 mL whole wheat flour 5 mL baking powder 5 mL baking soda 1/4 teaspoon salt 125 mL butter, melted 125 mL granulated sugar 2 eggs 310 mL greek yogurt 4 mL chai tea silvered almonds (to sprinkle over the muffins) Instructions 1. Preheat the over at 350 F degrees. 2. Mix the flour, the baking soda, the baking powder, the salt and the chai in a large bowl. 3. Mix the butter and the sugar in a medium bowl. 4. Add the eggs and the yogurt and mix until smooth. 4. Mix slowly the wet ingredients with the dry ingredients until smooth. 5. Spoon the mixture into parchment-lined muffins cups. 6. Sprinkle with silvered almonds. 7. Bake for 25 to 30 minutes or until a toothpick inserted in the middle of a muffin comes out clean. Makes 12 portions. related searches : Chai
