One of those cakes that enjoy to be eaten any time of the day. The healthy ingredients make it perfect for breakfast or tea time. The fruit gives it a very pleasant moist texture.

  • Scrape the inside of the vanilla bean into the milk add the heat the milk with the vanilla bean inside. As soon as it starts to boil, turn off the heat, remove the vanilla bean and add the oat flakes stirring well, then set aside for about 15 minutes.
  • Heat oven at 180°C.
    Grease the pan with oil and sprinkle with flour.
  • Mix oil with sugar. Add the egg and mix well. Add the honey, mix again and add the flour, coconut, baking powder and the soaked oat flakes into the batter and mix briefly.
  • Mix half of the fruit into a purée.
    Pour half the cake batter into the pan. Spread the mixed cherries swirling slightly with a fork over the batter. Pour the other half of the better over the mixed fruit and cover with the remaining cherries. Bake in oven for aprox. 35 to 40 minutes.
    Remove from the oven and let it cool before removing from the pan.
