Childhood favorite made over

Yup, that?s right, I got another snow day today.  :) You think my house would be spotless after another snow day.  Nope, your wrong though.  I sure do a good job of finding more interesting things to do than clean.  ;)   Most of the house is straightened-up and parts of it are actually clean.  Maybe I?ll have another snow day tomorrow, to actually finish cleaning!!  


So how did I fill my day??


Well, do you remember my New Year?s resolutions?  2 were related to fitness/running, but my 3rd resolution was to locate my lost love of reading.  I truly blame graduate school for helping me to lose my love of reading.  Grad school made me never want to look at a book again, at least for the last year anyways.  Honestly, I used to be the biggest bookworm!!  So yesterday I started a book on the way home from Charlotte and today I finished it.  :)   How?s that for locating my lost love?!?

This book has been sitting on my book shelf awhile and it ended up being awesome!  Kind of a Nicolas Sparks-ish book?..I might have shed a few tears.  I definitely recommend it!!!


I also went to the gym and took 2 classes tonight.  I mean what else did I have to do?!?  [Cleaning house wasn?t an option at this point in time either?.ha!]  I took PowerPump and cycle.  Holy cow.  I left tired, thirsty, and hungry!  I came home to a chicken and hummus sandwich on wheat bread and baby carrots with more hummus.  Then I got my cook on??

Chocolate no-bake cookies were by far my favorite cookie as a child.  So when I saw a recipe for Dark Chocolate and Oat Clusters, basically a healthier version of my childhood favorite, in the latest Health magazine, I was sold on purchasing it

Dark Chocolate and Oat Clusters



2 tbsp peanut butter
2 tbsp milk [recipe called for 1%, but I used skim]
1/4 cup semi-sweet chocolate chips
3/4 cup old-fashioned rolled oats

Directions:  Place PB, milk, and chocolate chips in saucepan and cook over low heat until chips melt [about 3 minutes].  Stir in oats; remove from heat. Using a spoon or melon baller, drop 8 ball-shaped portions on a wax paper lined baking sheet.  Refrigerate for 10 minutes before enjoying.  Makes 4, 2-cluster servings.

I quickly enjoyed a cluster after they refrigerated.  After licking the saucepan and spoon, I felt only 1 was in order.  ;)   They are much more dark chocolate tasty compared to my childhood favorites, but a good substitute nonetheless.  Another recipe occurred tonight too, but you?ll just have to wait till tomorrow for that one. 


I stink?..off to take a shower!!  Night!
