Crepes :
In a bowl, mix together the flour and the salt. Form a well, and add the eggs. Mix, then add the vanilla extract and the oil. If the mixture is too thick to combine, don't hesitate to add a little milk. Then, gradually add the milk while mixing. Once all the milk is used, cover the bowl and let it rest for 1 hour.Heat a crepe pan and apply a little oil using a paper towel. Pour a ladle of batter and let it cook for 1 minute, then flip the crepe. Let it cook for another minute, then remove from heat. Continue this process until there is no batter left, and your crepes are ready.
Filling :
Peel the apples and cut them into small pieces.Sauté them in butter, adding the sugar and the seeds from the vanilla bean. Cook until the apples start to turn into compote. Let cool.
Cut the crepes in half. Take one half and fold it in half, bringing the rounded edge towards the cut.
Place some apple filling at one edge.
Fold into a triangle to form a samosa (see the video for more details). Drizzle some caramel on top for extra indulgence.
And there you have it, your caramelized apple crepes samosas are ready!
Observations
Filling: Feel free to swap the apples for other combinations, such as banana and chocolate.
