Crepes samosas stuffed with caramelized apples

Have you ever had French samosas? Of course not! Though these ones are really the best fusion ever!

- Crepes :
In a bowl, mix together the flour and the salt. Then add the eggs, the oil, and combine well. Add the vanilla extract. If the batter is too hard to mix, you can pour a little bit of milk. Then, gradually add the milk, whisking everytime.
Cover the bowl and leave to rest for 1 hour. - Heat a large pan, and apply a little bit of oil with a paper towel. Pour a ladle of batter, turn your pan so the batter is spread everywhere, then let it cook for 1 minute. Then turn it over, and cook for 1 minute as well. Then take it out of the heat. Repeat until you don't have any batter left.
- The filling :
Peel the apples and cut them into dice. - Sauté them in some butter, add sugar and the vanilla bean seeds. Cook until the apples start to melt. Leave to cool down.
- Cut the crepes in half. Take one half, fold it in half in its lenght.
- Put some apple filling on one edge.
- Fold in triangle to form a samosa (as shown in the video). Drizzle some caramel on it or add an ice cream scoop.
- There you are!
