Chocolate Biscuit Slice

Extremely easy to make and you can whip up a good size tray in under 25 mins, which is great because a tray of these chocolaty squares barely lasts a day around my place. Great with coffee or packed in school lunches. The kids and hubby ;) will love em, not to mention yourself who should, by cooks rights, get first dibs ;)

Ingredients:
1 and 1/4 cups of self raising flour2 tablespoons of cocoapinch of salt3/4 of a cup of desiccated coconut1/2 a cup of caster sugar1/4 of a cup of small chocolate chips120 grams of butter, melted and cooled to room temperature1 egg yolk, lightly beaten1 teaspoon of vanilla essenceFor the Icing:
1 and 1/4 cups of sifted icing sugar2 tablespoons of cocoa5 tablespoons of hot waterextra desiccated coconut for sprinkling over icingMethod:
Prepare a 29.5 centimeter x 24 centimeter (or thereabouts) slice/lamington tin by greasing and lining it. Let the baking paper hang over the edges to make it easier to lift out after. Preheat oven to 170 degrees celcius. In a large bowl stir together the flour, salt, cocoa, coconut, sugar and chocolate chips. Add in the egg yolk, butter and vanilla and stir until evenly combined. The mixture will be very crumbly.

Tip mixture into prepared tin, spread out and smooth using the back of a dessert spoon, using firm pressure. Once the mixture is pressed in evenly place in the oven and bake for 15-20 minutes, (check after 15 minutes, you want the edges to be firm.)Meanwhile make icing by combining icing sugar, cocoa and hot water in a bowl. Stir briskly, adding more hot water if needed, to make more of a runny type of icing.When slice comes out of the oven, tip over icing and quickly spread to cover the top evenly. Sprinkle the top with a little coconut and leave to cool.* The heart decoration was done by piping melted chocolate, that was tinted pink and coloured cachous.
