Chocolate Chip Cookie Dough Cupcakes with Brown Sugar Butter Cream Frosting
- Ingredients: 2 1/2 Cups All-Purpose Flour 2 Teaspoons Baking Powder 1/2 Teaspoon Salt 1 1/2 Cups Granulated Sugar 2 Sticks Butter 2 Teaspoons Vanilla Extract 4 Eggs 1 Cup Milk 2 Cups Mini Semi-Sweet Chocolate Chips Frozen Cookie Dough Balls (about 1 tablespoon size) Butter Cream Frosting (decrease powdered sugar by 1/4 cup, and add 1/4 cup brown sugar) - Directions: Combine flour, baking powder, and salt in a small bowl. Beat granulated sugar, butter and vanilla in a large bowl until creamy. Add eggs, one a time, beating well after each addition. Gradually beat in flour mixture alternately with milk. Stir in half of the chocolate chips. Scoop into prepared muffin tins. Place cookie dough ball in center of batter and slightly push down. Bake in a pre-heated 375 degree oven for 18-20 minutes or until a toothpick inserted in center comes out clean (a little cookie dough might stick, but that's okay). After cooled, frost with butter cream and sprinkle with remaining chocolate chips.
