Cream Cheese Pound Cake, Cupcake and soft cookies with Strawberry Coulis
![]() I usually have a collection of recipes saved on my laptop from all my favourite food bloggers ... my sister and i wanted something sweet and easy to make so we decided to go thru a few recipes and found this recipe from SmittenKitchen.com Serves : 10-15 people Ingredients: 1 1/2 cups unsalted Butter1 pack of Philadelphia cream Cheese1 cup white chocolate drops3 cup sugar6 Eggs1 1/2 tsp vanilla essence3 cups all purpose flour1 tsp salt Method: Preheat oven to 325°FButter the Pan your going to be using ..in this case i made soft mini cookies, mini cupcakes and a log shape cake so you can use any mold you wish..In a mixer - Mix together butter and cream cheese untill smooth ( on medium speed) then Add Sugar and increase the speed and beat this mixture until light & airy...then add the eggs one by one and make sure you mix it all well..then add the vanilla essence , white chocolate drops ,flour and salt..Mix it till its smooth...Pour the batter into your mold and give it a shake to even it outBake till golden brown and make sure you do a toothpick test...bake for 1 1/4 hoursOnce its ready place the cake on a cake rack and cool it for 20 minutesStrawberry Coulis: Ingredients:2 cups of fresh strawberries 1/4 water 5 tbsp sugar ( according to taste ) 1 tbsp fresh lemon juiceMethod: Combine all and blend it until smooth..once done chill it for sometime... :) Note:* For Strawberry Coulis if u dont like it too thick and to remove the seeds ..press the puree through a fine mesh strainer... *Its not the same timing for all.. the cookies took less time than the cupcakes so you got to keep an eye on them...or else they'll burn :( Pour this wonderful strawberry coulis on top of your cream cheese pound cake and sprinkle some sugar powder and its just super yummylicious :) My sister did a good job with the cake :) I made a cute cupcake pack for B :) to snack at work...
