Dough balls pt. 2

About six months ago Dan came up with the great idea to buy pizza dough balls from Sam?s Club.  These dough balls have really made it easy for Dan to make fun pizzas (which are a great way for him to get more calories!)  This pizza was pretty caloric because Dan was trying to use up the whole package of cheese and the whole jar of pesto.

After eating this recipe we decided that we don?t enjoy Bertoli?s jarred pesto.  I think we are both spoiled by Dan?s delicious pesto.  It?s super tasty and not hard!

Green Pizza

adapted from Cooking Light

 

1 lb pizza dough, thawed if frozen 2 c broccoli florets, chopped 9 c spinach 1 c prepared pesto 2 c shredded mozzarella cheese 2 T olive oil salt

 

Preheat the oven to 425 deg F.  Roll out the pizza dough on a floured surface, brush with 1 tablespoon olive oil, and then bake for 15 minutes.

 

While the pizza dough is baking, heat 1 tablespoon of the olive oil in a large skillet over medium heat.  Add the spinach and a pinch of salt and cook until the spinach has wilted.

Remove the pizza crust from the oven and spread the pesto over it.  Add the spinach, broccoli, and cheese.  Return to the oven and bake for an additional 12 minutes or until cheese is slightly browned.

 

(to reduce calories you can cut the pesto and the cheese in half and it will be just as delicious!)
