Fresh Blueberry Jam on Almond Cookies
To celebrate this warm, springly Sunday I made a blueberry jam with a few simple ingredients served with some Italian almond cookies. This delicious treat looked, and tasted like it came out straight out from a gourmet magazine. Recipe: 1 pack of blueberry (mine were on sale!) 1 lemon 50g sugar 5 almond cookies Squeeze lemon juice into a medium pan Over medium heat, cook blueberries, sugar and juice Stir constantly and let it cook for 15 minutes or until it has the same consistancy as a fruit jam Crush almond cookies in a zip lock bag Pack crushed cookies on a plate (some may prefer to combine first with dash of melted butter for a better set) and freeze Top with blueberry jam, and serve with a cup of hot tea Happiness is indeed that simple!
