- 1 lb ground meat - 1 can RoTel tomatoes or store brand tomatoes with chilies - 1 teaspoon chili powder - 1 teaspoon cumin, fresh toasted and ground - Salt and pepper - 1/2 onion diced fine - 3 cloves garlic minced - 1 bell pepper diced - 1 can beans, pinto, black or kidney, drained and rinsed - 1/4 cup water - 2-4 tablespoons vinegar
Step 1: Brown meat, drain fat well.
Step 2: Add onions, garlic and bell peppers.
Step 3: Cook for a few minutes until the onions and garlic start to release their fragrance.
Step 4: Add seasonings and tomatoes, juice & all and the beans.
Step 5: Add the hot sauce and water if needed.
Step 6: Simmer for about 5 minutes or until most of the liquid has evaporated.
