Mexican salad w/avocado dressing

Ingredients

• 2-3 Roma tomatoes
• 1 Red Onion
• 1 Bunch Romaine Lettuce
• 1/2 cup Mexican Cheese
• 1/2 of Avocado
• 1 ripe Avocado
• Juice from 3 lemons
• 3 tbsps Cilantro Leaves
• 1 tsp salt
• 3 tbsps water
• 3 tbsps Extra virgin olive oil

Preparation

• Blend all the ingredients in a blender until smooth.
• Arrange the lettuce and layer the onions, tomatoes and avocado.
• Sprinkle cheese.
