This chickpea curry recipe delivers bold flavors that make every dinner feel like a feast

A dish full of color, aroma and flavor: this chickpea curry is proof that vegan cuisine can be sophisticated, nutritious and irresistible. Creamy and slightly spicy, it combines exotic spices such as turmeric, ginger and paprika with the smoothness of coconut milk and the velvety texture of chickpeas.
As well as being rich in vegetable protein and fiber, it's a practical recipe that transforms simple ingredients into a gastronomic experience worthy of a gourmet restaurant. Accompanied by loose basmati rice or artisan naan bread, this curry is perfect for both a special dinner and everyday life.
It's a dish that wins over the palate and the heart and proves that chickpeas can be the protagonist of an unforgettable meal.
Ingredients:
- 1 Tbsp olive oil
- 1 onion
- 2 garlic cloves
- 1 Tbsp ginger
- 1 Tbsp paprika
- 1 Tbsp cumin
- 1 Tbsp turmeric
- 1.5 Tbsp curry
- 1 tsp salt
- 1 tsp pepper
- 3 Tbsp tomato paste
- 3/4 cup coconut milk
- 1.5 cups cooked chickpeas
- Fresh cilantro
- 1 lime
Preparation:
- Chop the onions and garlic cloves. Sauté them in a frying pan with the olive oil, stirring from time to time.
- Once translucent, add the spices: ginger, cumin, turmeric, paprika and curry. Add the salt and pepper. Mix everything together.
- Add the tomato paste, coconut milk and chickpeas. Mix and cook for 30 minutes on a low heat, stirring occasionally.
- It's ready. When serving, sprinkle a little chopped coriander and add 1/4 of a lime. We used the rice as a side dish.
