  2. Pour the white wine, stir and let the alcohol evaporate. Then add a little hot stock and cook over low heat, stirring until the rice absorbs it.
  3. Continue adding broth little by little (it must be hot), always waiting for the rice to absorb it before the next addition.
  4. When the rice is almost ready, add the crumbled Roquefort cheese and mix well with the risotto.
  5. Remove the pan from the heat and add a small cube of cold butter. Stir vigorously to butter the risotto, achieving a shiny and creamy emulsion.
  6. Let stand for a minute, serve immediately and enjoy this risotto full of character.
