Ingredients:
Makes 8
1 1/2 c whole-wheat flour
1/3 c cocoa powder
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp espresso powder
1 egg
1 1/2 c milk
1 tbsp sugar
1 tsp vanilla extract
1 handful golden yellow raisins

Preparation:
1. Mix first set of ingredients together in a bowl.
2. Add second set of ingredients to bowl, and blend contents together until fairly smooth (some small lumps are ok).
3. Incorporate raisins into batter.
4. Cook as you typically would pancakes. I pour batter into a lightly greased griddle pan over medium-low heat, let cook until the edges bubble, flip, and cook other side until a finger lightly pressed into the pancake doesnt leave an indent.
5. Stack em high and serve with honey (if you can eat it), its the best thing for these.
