Ingredients:
Makes 12 muffins:
1 cup All-purpose flour
1 cup whole wheat flour
1/2 cup sugar
1 T baking powder
1/2 t salt
1 cup 2% milk
1 large egg
1/2 stick butter
1/2 cup chopped strawberries
1/4 cup chopped pecans
1/4 cup unsweetened coconut flakes

Preparation:

Preheat oven to 400 degrees.

Combine the flour, baking powder and salt.

Unwrap the butter and heat it in the microwave. Set aside to cool, but don't let it solidify again.

Beat the eggs in a separate bowl and then add the sugar, milk and vanilla to the eggs.

Thoroughly grease and flour a muffin pan.

Pour a tiny bit of the melted butter into the egg mixture and stir. Repeat a couple more times adding a little bit of butter each time. If you add all the warm butter at once, it will scramble your egg.

Gently fold in strawberries, pecans, and coconut.Gently pour batter into muffin pan and bake for about 19 to 23 minutes or until baked all the way through.
