- Preheat oven to 180 degrees celcius.
- Sift both flours into a large bowl.
- Rub in butter until mixture resembles breadcrumbs.
- Stir in sugar and coconut then eggs and lemon juice then using hand slightly knead until mixture comes together.
- Take a small piece of mixture and shape to be around the size of a 'king prawn'.
- Repeat with remaining mixture placing on a baking tray as you go.
- Bake for around 20 minutes or until light brown.
- Remove from oven and allow to cool completely before rolling in icing sugar and storing in an airtight container.
