Kokosove kiflice (coconut crescents)


- 250 g of unsalted butter
- 1 and 3/4 cups of plain flour
- 1 and 1/2 cups of self-raising flour
- 1 and 1/2 cups of desiccated coconut
- 3/4 of a cup of white sugar
- juice of 1 lemon
- 2 eggs
- 2 cups of icing sugar to roll in


Step 1

Preheat oven to 180 degrees celcius.

Step 2

Sift both flours into a large bowl.

Step 3

Rub in butter until mixture resembles breadcrumbs.

Step 4

Stir in sugar and coconut then eggs and lemon juice then using hand slightly knead until mixture comes together.

Step 5

Take a small piece of mixture and shape to be around the size of a 'king prawn'.

Step 6

Repeat with remaining mixture placing on a baking tray as you go.

Step 7

Bake for around 20 minutes or until light brown.

Step 8

Remove from oven and allow to cool completely before rolling in icing sugar and storing in an airtight container.
