Raspberry Jam Cupcakes

This is just about the easiest way to turn something ordinary into something special that I've seen in a long time. I was waiting to be called in for an appointment recently and started to look through the stack of magazines in the waiting room when I found a loose picture that had been torn out of some issue or another. I was called in before I could look for the source of the photo or find the recipe. The picture was of a cupcake that had been filled with something, some kind of fruit filling, and it looked delicious. A market customer friend gave me a jar of homemade raspberry jam last week and when I got home and saw it I knew that it would be the perfect filling for this basic cakey snack.


I made a simple one bowl yellow cake and when the cupcakes had cooled I scooped out a little triangle shaped piece from the top of the cake with my 1/2 teaspoon metal measuring spoon and filled it with luscious homemade raspberry jam. I then replaced the piece of cake and frosted the cupcake with chocolate frosting. What could possibly be easier than that! Maybe starting with a cake mix would be a little faster and I'm sure the results would be almost as good. Either way, the results are delicious and oh, so pretty on a plate.



If you don't have a basic, one bowl recipe for a good yellow cake you might like this one. It's especially good for cupcakes.

Yellow Cake
1/3 cup butter
2 cups cake flour
1 cup sugar
2-1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
1 egg, slightly beaten
1 teaspoon vanilla

Stir butter to soften. Mix in the dry ingredients. Add half the milk and the egg. Mix on low until the flour is moistened and then beat on medium speed for 2 minutes. Add remaining milk and vanilla. Beat 1 minute longer.

Line muffin pans with paper liners and fill about 2/3 full. Bake at 350 degrees for about 20 minutes or till a cake tester comes out clean.
