Raspberry financiers: a detailed and easy recipe
While composing our gourmet coffee last time, we felt the urge to make financiers. And we can assure you that we devoured these little almond powder cakes. To enhance the flavors, we even added raspberries ;-) You too can try the experience and vary the pleasures by replacing almond powder with pistachio or hazelnut powder and raspberries with blueberries!

Preparation
Prepare the hazelnut butter: Melt the butter in a pan and let it brown.
Remove from heat when it smells like hazelnut and has browned. Strain and let cool until it reaches 104°F (40°C, room temperature).
Combine almond powder, flour, and icing sugar in a bowl. Add the egg whites and mix well.
Finally, add the hazelnut butter and vanilla extract and mix everything well.
Pour the batter into a greased financier mold and place 2 raspberries in each financier.
Bake in a preheated oven at 200°C (390°F) for 15 minutes.
Since the mold only holds 9 impressions, we left the batter at room temperature while baking the first financiers, then baked the rest afterward. And there you have it, it's ready!
