Sweet Potato Pone - A Caribbean Recipe
OOPS! I missed it! I prepared this dish for the Caribbean event that was Going "ON" in Meeta's Blog, thinking the cut-off is until this month end! But, noticed today that it is already over! Sweet potato - 1 big or 2 small onesCoconut - 1 cup, shreddedWhole milk - 1/2 cupLight Brown sugar - 1 cup ( The original recipe called for the Dark one)Ginger - 1 inch piece, shreddedCinnamon powder - 1/2 tspButter - 2 tbsp, softenedRaisins and Craisins - 1/2 cupWater - 1/2 cup Luke warmAnyways, its OK! Here's the recipe... Ingredients: ![]() How to make it: Pre-heat oven to 375 degrees Fahrenheit. Wash, Peel and Grate sweet potato. Combine sweet potato, milk, brown sugar and spices. Add butter, water, coconut and raisins. Mix well. Pour into a greased baking pan and bake for about 1 hour or until it gets firm at the center. Serve! ![]()
