Sweet Potato Soup in the Slow Cooker
One of my favourite things about winter is soup. I love soup, and its usually healthy, unless of course you eat it with half a loaf of bread and a slab of cheese! Now that I have my slow cooker its even easier to make yummy soups. And the extra vegetables we have to work now give so much more scope for variety than we had last year. Sweet potato soup is one of my favourites, and this one didn't disappoint. I even managed to get Oscar to have one dip of toast into this one.
Sweet Potato Soup (Low Amines, Moderate Salicylates, Low Glutamates) 2 large sweet potatoes, peeled 2 carrots2 medium potatoes, peeled4 cups home made vegetable or chicken stock1 1/2 cups milkSaltSour cream for serving (optional) Slice the vegetables into evenly sliced pieces and place into the slow cooker with the stock.Cook on low for 5 to 6 hours, or until the vegetables are tender.Puree in a food processor, in batches.Return the pureed soup to the slow cooker and stir in the milk, add salt to taste.Cook on low until heated through.Serve. Optional - add a spoonful of sour cream to each serving and swirl through the soup. related searches : Sweet
