*Chocolate Peanut Butter Crispy Bars
These are wonderful crispy bars I made Easter weekend. Its a combination of chocolate puffy cereal (cocoa pebbles), marshmallows, butter and crunchy peanut butter. Its a delicious variation of the classic rice crispy treat. They're rich and decadent with a ganache lightly sprinkled with sea salt. They are knock out delicious!
Chocolate Peanut Butter Crispy Bars: 5 cups cocoa pebbles (or other chocolate puffy cereal) 1/2 cup crunchy peanut butter 1 bag of marshmallows (small will melt better but large are fine too) 4 tablespoons melted butter 2 cups chocolate chips 2-3 teaspoons vegetable shortening *sea salt and decorations to sprinkle Grease a 13x9 baking dish, line with parchment if desired. In a microwave safe bowl or over a double boiler combine marshmallows and butter (still hot preferably). Microwave 10-30 seconds at a time until the marshmallows melt. Once the mixture is melted and still warm combine the peanut butter and warm slightly if necessary. Quickly combine the cocoa cereal with this mixture and spread evenly into the prepared baking dish. Place in the refrigerator or freezer while you prepare the chocolate topping. To prepare the chocolate combine the chips with the shortening and melt in a microwave safe bowl or over a double boiler. Evenly spread this mixture over top of the cold crispy bar mixture. While its warm still sprinkle with sea salt and decorations if desired. Allow to fully cool approximately 2 hours before serving.
