Beans Curry with Coconut
A wonderful accompaniment to rice with most sambhars & kozambus......... Ingredients beans - 250 gms, stringed & finely chopped grated fresh coconut - 2 tbsp green chillies - 2, chopped into 1 inch bits haldi / turmeric powder - a pinch salt to taste - about 1/2 tsp oil - 2 tsp mustard seeds - 1/2 tsp a few curry leaves Method 1. Heat the oil . Add the mustard & allow it to splutter. 2. Add the chillies & then the beans, salt & turmeric. Stir well & cook for a minute on high flame. 3. Sprinkle 3-4 tbsp of water, reduce the flame & cook uncovered on medium flame until the beans is done. Stir every now & then for even cooking of the beans. 4. When the beans is done , sprinkle with coconut & curry leaves, give it a good stir & serve immediately. *****************************************************
