Kerabu kacang botol (asian style winged beans salad)

Ingredients

• 10 winged beans (remove strings on both sides and thinly sliced)
• 1 lemongrass (thinly sliced/shredded)
• 2 sprigs coriander leaves (2-3 ; thinly sliced/shredded)
• 4 shallots (chopped/sliced thinly)
• 2 red/birds eye chilies (chopped/sliced thinly)
• Lime juice (as needed
• 1 piece palm sugar (small piece or as per taste ; smoothly crushed)
• 2 tbsp coconut (fresh grated ; dry fry till crispy and light brown in color)
• Salt to taste

Preparation

• Add all ingredients into a mixing bowl.
• Toss and stir.
• If possible, serve immediately to retain its freshness.
