Carrot Cake Pancakes

I'm still trying to finish painting my living room. I still have the woodwork left to do, but I wanted to share my latest project. Here's a picture of my bare wall.




My husband offered to put our new vinyl on the wall and Sloan wanted to help. I tend to put things up crooked. My hubby was smart, he used a level.

I wouldn't of even thought of using a level!


Here's a better picture of my sweet hubby. He's cute, huh!


I thought it turned out pretty good. I still have more to do, so I'll share that later!




I found this recipe on a blog the other day, and now I can't remember who's blog. So, if it was you please let me know! As soon as I saw the recipe I knew I had to make them! What a sneaky way to get a vegetable in at breakfast! The family loved them, well, except Sloan. She didn't like seeing the carrots in them. I thought they tasted like carrot cake.

Carrot Cake Pancakes

1 1/4 cup flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1/8 teaspoon freshly ground nutmeg
Dash of ground cloves
Dash of ground ginger
1/4 cup brown sugar
3/4 cup low-fat buttermilk ( I soured milk with vinegar)
1 tablespoon oil
1 1/2 teaspoons vanilla
2 large eggs, lightly beaten
2 cups finely grated carrot (about 1 pound)
Cooking spray

Honey Butter for Topping

3 tablespoons butter, softened
2 tablespoons honey

In a large bowl measure all the dry ingredients. Whisk to combine.
Measure the wet ingredients into a small bowl and whisk. Combine the wet
ingredients to the dry and mix, add the grated carrot and whisk until just
combined.

Heat a large nonstick skillet over medium heat. Coat pan with cooking spray. Spoon 4 (1/4 cup) batter mounds onto pan, spreading with a spatula. Cook for 2 minutes or until tops are covered with bubbles and edges look cooked. Carefully turn pancakes over; cook 1 minute or until bottoms are lightly browned. Repeat procedure twice with remaining batter. Combine butter and honey in a small bowl; serve with pancakes.
