Char Siew (Vegetarian) & Old Cucumber Soup
"Char Siew" is a Chinese word for roasted pork but the one I am using is the vegetarian version. I must stay the taste is almost the same as the real roasted pork. With the old cucumber added inside, it tasted nice and tasty. Ingredients 120g vegetarian char siew (sliced thinly) 1 medium size (200g) old cucumber - cut into chunks 3 cloves garlic -chopped 3 shallots -sliced thinly 1 stalk spring onions (shredded) 1 tsp chicken granules 1tsp black pepper 2 tsp Chinese wine 2 tbsp olive oil 1/2 litre water salt to taste Method: When oil is heated, fry the char siew with the garlic and shallots for 4-5 mins. Add in the water, granules, pepper, wine and salt to taste and let it boil. Once boiling, add the old cucumber, cook for another 3mins and off the heat.
