Chocolate Cheesecake
This was pretty easy to make although I baked mine a little bit too long (blame Glee). The pics don't really do it justice - I think I made the mistake of taking the pics while it was still warm - it looked more like cheesecake after it had been in the fridge a while. This is another Tana Ramsey recipe btw. The Recipe 300g packet HobNobs 75g butter melted 150g dark chocolate (I used 72% cocoa) 750g mascarpone 125g light muscovado sugar 3 eggs beaten 1. Preheat oven to 180C/160C fan/350f/gas 4. Line a springform tin with greaseproof paper. 2. Whizz the biscuits up in a food processor until crumbs and then mix in melted butter. Press into bottom of tin and put in fridge for 10-15 mins. 3. Melt chocolate and leave to cool. 4. Put mascarpone in a large bowl and beat with whisk until smooth. Add sugar and mix again. Stir in the chocolate and eggs. 5. Add chocolate filling onto the base and bake for 45-60 minutes. Allow to cool then refrigerate. related searches : Chocolate
