Ingredients of Christmas Jewel Cake Recipe
700g fruit cake
50g brazil nuts
50g almonds
1/4 cup multi glace cherries
1/4 cup glace pineapple
2 tablespoons apricot jam
1 tablespoon brown sugar
1 tablespoon brandy or sherry

Description of Christmas Jewel Cake Recipe
1.Place a fruit cake onto a serving plate. Arrange brazil nuts, almonds, glace cherries and pineapple on top of the cake.

2.In a saucepan heat together until thick and syrupy 2 tablespoons apricot jam, 1 tablespoon brown sugar and 1 tablespoon brandy or sherry. Allow the glaze to cool a little then spoon onto fruits. Finish with a festive ribbon.
