Easy Blackberry Clafouti Recipe and A Slice Of Life!
I love to have fresh fruit with my yogurt and homemade granola. I bought a large container of blackberries for breakfast, when I was at Costco. But wouldn’t you know it, I ran out of yogurt. And I didn’t want make a trip to the store for just yogurt, because it never ends up being just yogurt, if ya know what I mean. So all week, breakfast has been a big bowl of of Frosted Mini Wheat! ![]() And every time I opened the refrigerator door, there where those big, beautiful, blackberries, winking at me. Begging me to let them come out and play. I had just the playground for these babies! I have wanted to bake a Clafouti, (pronounced klä-f?-t? ‘) for what seems like years now. Typically made with cherries, this French dessert can be made with any fruit. We LOVED this! I served it with just a sprinkling of powdered sugar. Sweetened whip cream was the suggested topping but I didn’t have any cream. No cream, no yogurt. (sigh) I took the rest of the clofouti to work the next day and served it with some vanilla ice cream. Now that is heaven! I cant wait to make it again, using some fresh raspberries or even some fresh peaches this Summer. And let me tell you, don’t save this recipe for just dessert. It would be excellent served for that special breakfast or brunch! Can you say breakfast in bed? And with Valentines Day coming up, this has “I love you” written all over it. It’s been a busy week in the *Megan’s Cookin* household. Not a ton of cookin’ going on, but a lot of living! Speaking of having ?I love you? written all over it, I wanted to share a picture of my daughter with her boyfriend. They were all dressed up for the Winter Formal. She was having a fit getting her picture taken saying it was “all awkward“. I guaranteed her she was not the only person having her picture taken that evening, and that parents all over town were snapping away. She’s gonna kill me for posting this picture! Better yet, order your own one of a kind, hand painted tile. That is one talented girl there! Thank you Renee! Now… on to that recipe. Your gonna want to print this one out and try it. Trust me, it’s a keeper!! Blackberry Clafouti 3 cups ripe blackberries 6 tbsp. sugar, divided ¾ cup all-purpose flour ½ tsp. baking powder ¼ tsp. salt 3 eggs (well-beaten& at room temperature) ¾ cup milk (I used half & half) 3 tbsp.vanilla extract (I used Vanilla bean paste) 2 tbsp. melted butter Powdered sugar for dusting Preheat oven to 375 degrees. Generously butter a 10 inch shallow baking dish or glass pie plate. Spread berries on buttered dish. Sprinkle evenly with 3 tbsp. sugar. Sift flour, remaining 3 tbsp. sugar, baking powder, & salt into a medium bowl. In a separate bowl, whisk eggs & milk together. Pour liquid ingredients over dry ingredients. Whisk to incorporate all ingredients. Stir in vanilla & melted butter. Pour batter over berries. Place baking dish on a baking sheet. Bake on center rack of oven until top is slightly puffed & golden brown…about 30 minutes.(Edges will be lightly brown & starting to pull away from the side of the pan.)
