Leek and potato soup!!

Ingredients

Number of serving: 4
1 leek, sliced finely

1 medium/large potato(about 100 g), peeled andcubed

1/2 finely chopped medium onion

1 clove garlic, grated

1 finely sliced small chilli

1 vegetable stock cube( you can also use vegetable stock),

2 cups hot water

salt and pepper to tastechopped coriander to garnish

Preparation

  • Heat the pan and gently sauté the leeks, onions, potatoes, garlic and chilli for about 10 minutes or until slightly softened.
  • Blend this mixture with a bit of water(optional).
  • Dissolve the stock cube in the hot water and add to the sautéd vegetables.
  • Bring the mixture to the boil and the reduce the heat, cover and simmer gently for about 15 minutes.
  • Season with salt and pepper and garnish with a little chopped coriander and serve immediately.
