- Heat the pan and gently sauté the leeks, onions, potatoes, garlic and chilli for about 10 minutes or until slightly softened.
- Blend this mixture with a bit of water(optional).
- Dissolve the stock cube in the hot water and add to the sautéd vegetables.
- Bring the mixture to the boil and the reduce the heat, cover and simmer gently for about 15 minutes.
- Season with salt and pepper and garnish with a little chopped coriander and serve immediately.
