Fun Waffles

Yesterday was Columbus Day so since we didn't have to do the usual run to school routine, I spent the morning making waffles. Some were gobbled up in no time but I always make extra to freeze for busy mornings. Just pop them in the toaster like the store bought variety.

So I recently decided on this Mickey Mouse waffle iron. I just thought it was too fun. Again, this recipe utilizes Bisquick just to make life easier. I always get good results with this recipe.

Dairy and Egg free Waffles

2 cups Bisquick baking mix
1 1/2 cups vanilla soymilk or rice milk
3 Tbsp applesauce
2 Tbsp canola oil

Preheat waffle iron according to manufacturer's directions.
Mix all ingredients until smooth, breaking up any lumps.
Add batter to waffle iron and cook according to manufacturer's directions.
Remove from waffle iron when golden brown and serve warm.

To freeze: store in airtight container or freezer bags and reheat by toasting on lowest toaster setting so the waffle does not burn.
