Gingerbread to boost my confidence
Happy news, I have a gingerbread whoopie that?s amazing! I can?t stop munching them. These cookies are a combination of gingerbread cookie and gingerbread cupcake. I actually have a gingerbread confession: I never liked gingerbread growing up. And the reason for that was because of how crunchy it was. Gingerbread men are always crunchy. Very un-cookie if you ask me. So I?ve always made more cake like gingerbread, which just happens to be the perfect cookie for whoopie pies. Ingredients 5 TBSP butter, softened 1/2 cup white sugar 1/2 cup molasses 1 egg + 1 egg yolk 1 3/4 cup flour 1 TBSP unsweetened cocoa powder 1 3/4 tsp ground ginger 1 1/2 tsp ground cinnamon 1/4 tsp allspice 1 tsp ground nutmeg 1/4 tsp salt 1 tsp baking soda 1/2 cup hot milk Directions Preheat the oven to 350 degrees. Cream together the butter and sugar. Add molasses, then the egg and yolk. Heat milk in a saucepan. Once warm and creating a foamy top, dissolve baking soda in milk. Sift together the flour, cocoa powder, ginger, cinnamon, allspice, nutmeg, salt. Add to wet molasses mixture. Once combined add the milk and soda mixture. Spoon or pipe onto lined baking sheet and bake for about 11 minutes. The only hard part of this recipe is the hot milk and baking soda step. Once you heat the milk and add the baking soda the milk will foam. Just stir and continue to dissolve the soda. You will have a little more than 1/2 cup milk by the time you add it to the batter. That?s okay. If the batter looks a little too runny for cookies just add a little more flour. I originally set out to put cream cheese frosting in my gingerbread whoopie, but my mind felt really unsettled about it and I kept thinking about basic buttercream. So I added buttercream minus the vanilla and it?s superb! The spicy cookie really takes the spotlight in this whoopie. I think it might be my favorite to date. What a beauty! I?m now 3 whoopies down only 3 more to go. We?re selling a total of 7 different whoopies next weekend at the Basketball Tournament. But frostings are easier, so I think the eggnog, peppermint, and peanut butter will come together in an afternoon and after a lot of powdered sugar! I also have to work on the red velvet and cream cheese frosting since my order for Thursday evening includes red velvet mini bites. I thought about doing Red Velvet attempt 2 today, but I was still feeling a little defeated from the first attempt. Deciding to go with gingerbread was such a good choice.
