Spotted Cow Cookies

Its called spotted cow cookies because it reminds us of this.
I saw these yummy cookies in Chocorange and immediately gave it a try since the ingredients were easily available. We really enjoyed it and will surely bake them quite often because of its simplicity. I made slight changes in the method of preparing it. Potato starch is used here which is much much finer than corn flour. If you cannot get potato starch you can replace with corn flour. Anyways something is better than nothing. Potato statch is readily available in all supermarkets here in Singapore. A small packet just coasts under 1.60$.
Spotted cow Cookies (makes 35 pieces)
Butter- 125 grams (I used salted)
Potato starch- 125 grams
Powdered sugar- 40 grams (may be add a bit more next time)
Plain flour- 80 grams( I used top flour)
Vanilla- ¾ tsp
Coco powder- 2 tbps
Method:

Method:
Beat in butter and sugar until pale and fluffy.
Mix the rest of the ingredients except the coco powder.
Divide the dough into two and to one portion add in the coco powder and mix evenly to get the chocolate dough.
Pinch a small portion of the two dough and roll it.
Place on a baking sheet lined with parchment paper.
Bake for 15-20 minutes at 170 degreeC in a preheated oven.
