Grilled Sicilian Eggplant with Red Onions
2 Sicilian eggplants (sliced thin with skin) 4 cloves garlic (crushed & chopped) 1 red onion (sliced thin) ½ cup basil (chopped) 4 tablespoons ketchup 1 teaspoon hot sauce Olive oil (for grilling & drizzling) 1 tablespoon capers with about 1 tablespoon of juice Grill eggplant on griddle with a little olive oil drizzled over eggplants. Grill until golden. Grill garlic, onions, basil and capers together and add ketchup and hot sauce.
