Homemade Yeast Rolls
Yeast Rolls 1 (1/4-oz.) envelope active dry yeast Stir together yeast, 1/4 cup warm water, and 1 tsp. sugar in a measuring cup and let stand 5 minutes. Beat the remaining 2 tablespoons sugar, softened butter, and salt at medium speed with a heavy-duty electric stand mixer until creamy. Add egg, milk, and yeast mixture and beat until blended. Gradually add flour, beating at low speed until smooth. Turn dough out onto a well-floured surface, and knead until smooth and elastic, about 5 minutes. Place in a well-greased bowl, turning to grease top. Cover and let rise in a warm place for 30 minutes to an hour, or until doubled in bulk. Punch dough down, turn dough out onto a floured surface, and divide dough into 24 pieces. Roll into balls. Place 1 inch apart on a rimmed baking sheet. Cover and let rise in a warm place for another15 to 30 minutes or until rolls have risen together. Melt 3 tablespoons of butter in a small bowl and mix in 1 tablespoon honey. Brush rolls with melted honey butter and bake at 400 degrees for 10 to 15 minutes or until rolls are brown and sound hollow when thumped. Serve warm with more butter and honey. *You can make these rolls in advance and freeze them. After baking, wrap cooled rolls loosely in aluminum foil, place in a zip-top plastic freezer bag, and freeze. Heat foil-wrapped rolls in a 325° oven for 30 minutes or until warm.
