Homemade Yeast Rolls

I made a scrumptious Sunday lunch of roast, potatoes, carrots and broccoli casserole.My family cannot enjoy a meal, no matter how decadent, without some kind of bread. I keep a stash of my wheat rolls in the freezer, but when I went out to get some, I found that they were all gone. I had just put the broccoli casserole in the oven, so I had an hour to spare. I decided to try making my own yeast rolls instead of sending Jason to the store for some. These were a big hit and I had a huge bag left over that I will freeze so we can have them with another meal. They have a soft texture and are not too dense. They are a little bit sweet and you can taste the yeast in them, which I love. I will definitely make these again.


Yeast Rolls


1  (1/4-oz.) envelope active dry yeast

1/4  c. warm water (105° to 115°)

1  tsp. sugar

2  T. sugar

2  T. butter, softened

1 1/4  tsp. salt

1  lg. egg

1 1/4  c. milk

4  c. all-purpose flour

3 T. melted butter

1 T. honey



Stir together yeast, 1/4 cup warm water, and 1 tsp. sugar in a measuring cup and let stand 5 minutes. Beat the remaining 2 tablespoons sugar, softened butter, and salt at medium speed with a heavy-duty electric stand mixer until creamy. Add egg, milk, and yeast mixture and beat until blended. Gradually add flour, beating at low speed until smooth. Turn dough out onto a well-floured surface, and knead until smooth and elastic, about 5 minutes. Place in a well-greased bowl, turning to grease top. Cover and let rise in a warm place for 30 minutes to an hour, or until doubled in bulk. Punch dough down, turn dough out onto a floured surface, and divide dough into 24 pieces. Roll into balls. Place 1 inch apart on a rimmed baking sheet. Cover and let rise in a warm place for another15 to 30 minutes or until rolls have risen together. Melt 3 tablespoons of butter in a small bowl and mix in 1 tablespoon honey. Brush rolls with melted honey butter and bake at 400 degrees for 10 to 15 minutes or until rolls are brown and sound hollow when thumped. Serve warm with more butter and honey.


*You can make these rolls in advance and freeze them. After baking, wrap cooled rolls loosely in aluminum foil, place in a zip-top plastic freezer bag, and freeze. Heat foil-wrapped rolls in a 325° oven for 30 minutes or until warm.
