Lemon Blueberry Muffins

When life gives me lemons I make Lemon Blueberry Muffins. But before we attack the muffin tins?

I?m uploading my new banner today! I just cant wait. I tried really? really? really hard, like a kid on Christmas Eve. But then I started thinking SMM is My place. I make the rules here and being patient isn?t necessarily a necessity or a lesson to be learned. So voila! Do you like it?


If you?re not seeing the banner it?s okay, I?m having some file size and type issues with WordPress. Turns out WordPress doesn?t like Adobe too much either. It will be visible sometime today.


Why is this blog upgrade taking so long Maren? That?s a great question. I?m glad you asked.  I misread a step while purchasing my theme from DIYThemes and paid for it through PayPal, which is fine except for it takes 3-5 business days to process. So, thanks to the weekend, no theme until Monday. Needless to say I?m a little perturbed about that one.


I?m so excited, I can?t wait until Monday. Too bad I can?t make the rules for this situation. This whole PayPal mistake is very frustrating and I?m not dealing with it well. I don?t know why it must take 3-5 days to process a transaction, we?re in the 21st century after all. To cope with my frustration I made muffins for breakfast.


Lemon Blueberry Muffins

my baking muse since high school!

Ingredients



1 cup milk
1 egg
1/3 cup vegetable oil
2 cups flour
2 tsp baking powder
1/2 cup sugar
2 tsp lemon extract or 1 TBSP lemon zest
1/2 cup fresh blueberries

Directions



Preheat oven to 400 degrees and line muffin tins with paper liners.
In a bowl mix milk, egg and oil. Once combined add flour, baking powder, sugar, lemon, and blueberries. Fold together in only a few stirs, do not over mix or crush the berries.
Pour into muffin tins. I always get 12 muffins.
Bake for 20 minutes and let cool on a wire rack.

There is something about muffins that is supposed to be easy. They should come together in 10-15 minutes, bake for longer than prep time and be divine right out of the oven. Muffins are like the simple man?s cupcake. Muffins should be sweet enough to feel like dessert but not so sweet that guilt manifests over eating a couple for a meal.

You may leave out the lemon if you insist, the original recipe I started using about 8 years requires no lemon.
