Crepes cake with lemon curd - video recipe!

- A 9-inch cake circle (22cm)
Preparation
The lemon curd :
Peel and juice the lemon, and put it to boil in a pot. Meanwhile, beat the eggs with the sugar, then add the corn flour and mix well.
Add this mix to the boiling lemon juice, and stir on low heat until it thickens.
Take out of the heat and add the butter. Mix until it has completely melted, then put some plastic foil directly on the cream, to avoid the formation of a skin.
The crepes batter :
In a bowl, mix together the flour and the salt. Then add the eggs and mix.Then, add the vanilla extract and the oil. If the batter is too hard to mix, you can pour a little bit of milk.
Then, gradually add the milk, mixing everytime. Once you poured all the milk, cover and leave to rest for one hour.
Heat a large pan, and apply a little bit of oil with a paper towel. Pour a ladle of batter, turn your pan so the batter is spread everywhere, then let it cook for 1 minute. Then turn it over, and cook for 1 minute as well. Then take it out of the heat.
Once the crepes have cooled down, put the circle on it, and cut the edges with a sharp knife.
On the serving plate, put 2 crepes and the circle.
Apply a thin layer of lemon curd. Then put a crepe on it, and spread another layer of lemon curd. Repeat until there is only one crepe left.
Put the last crepe on top and apply some pressure. Put in the fridge for 1 hour.
Unmold gently.
There you are, your crepes cake is ready !
